Flapjacks are now a popular choice for a quick snack and are a great lunch box addition. However many of the bars you can buy in the supermarkets are filled with sugar and are less healthy than they first appear. But they are dead easy to make yourself ... and much healthier.
Why not have a go at this healthy way to make flapjacks using coconut, chia seeds and xylitol? Xylitol is a natural alternative to sugar that's made from vegetables. It also less calorific than table sugar and won't break down into the acids that rot your teeth. It is however not great for dogs, so that means more flapjacks for you right?
What you need:
- 115g/4oz creamed coconut
- 60g/2oz rice syrup
- 30g/1oz xylitol
- 160g/5.5oz oats
- 10g/1tsp chia seeds
- 3tbsp rice milk
What you do:
- Gently heat and melt the creamed coconut with the rice syrup and xylitol.
- Mix in the oats well and add the rice milk and chia seeds.
- Bake at 160c for around 20-30 minutes, then cool in a tin. Simple.
