Here's a different way to enjoy porridge in the morning ... without oats. I have been craving quinoa porridge ever since visiting Nourish, Sheffield’s only fast food restaurant. Nourish teased me with it on their breakfast menu but I arrived after breakfast had finished. So for the past few weeks I’ve been trying to perfect a quinoa porridge recipe. Finally I’ve cracked it. Many thanks to my friend and head chef Nick Galer for helping. I didn’t have Nourish’s cooking equipment so had to improvise.
Quinoa is a slow release carbohydrate (it releases its energy gradually). It’s also a complete protein, containing all the essential amino acids we need. It looks a little like couscous and you’ll find it near couscous in the supermarket. Quinoa makes a great addition to meat or fish and vegetables for dinner. But it also tastes amazing sweetened with milk and fruit for breakfast.
So, if you’re getting bored of porridge and it’s too cold for overnight oats give this recipe a try.
